  • 2 enchilada tortillas (Old El Paso brand), cut into 2cm strips
  • 1 tbs vegetable oil
  • 600g chicken thigh fillets, cut into 3cm pieces

Spicy tortilla wedges
  • 4 enchilada tortillas (Old El Paso brand), quartered
  • 1/2 tsp Mexican chilli powder

Method

  1. Preheat oven to 200°C. Line a baking tray with non-stick baking paper. Arrange the tortillas, in a single layer, over the prepared tray. Sprinkle lightly with chilli powder. Bake in preheated oven for 5-6 minutes or until golden
