Chicken Fajitas


Enjoy this Mexican food at your home. A delicious combination of chicken, onion, red chili pepper, green bell pepper etc. guaranteed to make your mealtime an interesting treat.


Servings: 4 Persons

Ingredients:

1.Oil…………………………………………………………2 tablespoons
2.Boneless Chicken breast halves (cut into thin stripes)……3
3.Onion (medium in size, cut in wedges)…………………...1
4.Garlic cloves …………………………………….………..2
5.Mild green or red chili peppers (seeded & sliced)………...4
6.Sweet red bell pepper (seeded & cut in strips)………..……1
7.Green bell pepper (seeded, cut in strips)……………………1
8.Cucumber (trimmed, cut in strips)…………………………1
9.Flour tortilla (warmed)……………………………………..8
10.Sour Cream ………………………………………………..1/2 cup
11.Green Onions (trimmed & sliced)………………………….1 bunch
12.Tomatoes (chopped)……………………………………….As required

Method:

1.Heat oil in a skillet.
2.Cook chicken strips over high heat for 5 minutes. Stir constantly. Drain when cooked and keep aside.
3.Add onion, garlic and chili peppers to the oil in the pan. Sauté over high heat for 2 minutes.
4.Add bell peppers and cucumber in the pan. Cook for 4 minutes over high heat. Vegetables will begin to have a blackened look around edges.
5.Add cooked chicken to the same pan and heat until hot.
6.Serve with warm tortillas, sour cream, sliced green onions and chopped tomatoes.
7.If desired serve with hot cooked rice, salsa and refried beans.
